Weevils & How to Keep them Out of Your Food Storage

by heather
A few months ago I bought a few packages of pasta. A few weeks later I saw through the window of the package that there were weevils in them, so I threw the pasta out. I thought that was the end of it. Nope. This week I found them in a giant bag of white rice and a bag of white flour. I then spent a good part of my week opening packages in my pantry, dumping out the contents, searching for bugs, repackaging everything and wiping down my shelves with Lysol. I had the beginnings of a cold and Read more [...]

Food Storage Friday: Pesto Risotto with Balsamic- Braised Veggies

by heather
This week I thought I would try something new. Risotto, it sounds so fancy, and from what I hear it brings cheftestants on Food Network Show to tears. I'm not so confident in my skills that I would enter it into a contest, but it was delicious and I definitely would make it again. However, when I finished I realized I forgot the wine. Oops. I think my risotto turned out a little stiffer than it was supposed to, it's supposed to be creamy. This was just yummy pesto flavored rice, next time I must Read more [...]

Food Storage Friday: Fiesta Revisited

by heather
Last weekend we were invited to a party that was cancelled for rain. But I had already bought everything to make Wheatberry salsa, which while delicious is too much for my husband and I to eat while it's fresh. We decided to invite over our friends who previously spent a year as vegetarians, so they're very open to meals that don't involve meat. :) In addition to snacking on salsa, our meal included: Cafe Rio Style Black Beans Sweet Pepper Rice Wheatberry Tacos and because we got a whole Read more [...]

Food Storage Friday: Green Curry

One of the best places to eat in St George is a Thai restaurant run by an adorable older Thai woman named Benja. Last fall for a fun date my husband and I went to one of her cooking classes. I thought 'Ooh I'm going to learn to cook like Benja'. Actually, I learned why I will continue to frequent Benja's because it's worth it to just pay her to make my dinner. The first thing we learned to make were Thai Basil Rolls, which wasn't too complex. The problem is, the best part is the sauce that you dip Read more [...]

Food Storage Friday: Pumpkin Coconut Curry

by heather
When I tell my friends that I spend about $250 each month on groceries for our family of five I get various skeptical responses. People assume that we live off of Top Ramen and potatoes, or that I spend all of my time gardening and baking. (My kids would actually eat Ramen noodles every day if I let them, but I generally trying to push things like sandwiches and produce. Also, our gardening attempts have all been epic failures and I only bake a few times each month.) We actually eat a variety of Read more [...]

Food Storage Friday: Southwestern Stuffed Peppers

by heather
I found this recipe on Pinterest, and what do you know, it turned out pretty well. (The recipe is originally from Simply Love Food.) She said to stuff three to four peppers with the filling. I used 2 average peppers and one long red pepper. I still had enough filling leftover to fill at least four more peppers. I spread it on tortillas with avocados and hot sauce for lunch for a few days. The original recipe calls for 1/2 lb ground turkey. I cut up a couple of cooked Boca burger patties. But if you Read more [...]

Food Storage Friday: Sweet Pepper Rice

by heather
I found this recipe on Skinny Bovine's Kitchen. She says this rice is drool-worthy. I have a hard time drooling over anything that isn't cheesecake, but it was definitely yummy. And unlike the Sweet Chilean Rice that I did a few weeks ago, it was actually sweet, but not too sweet. I served this with burritos, but it would lend itself well as a side to anything Mexican. Sweet Pepper Rice Food Storage Ingredients: 1/4 cup sugar 1/4 tsp garlic powder 1/2 tsp salt 1 1/2 cups white long grain Read more [...]

Food Storage Friday: Sweet Chilean Lime Beans and Rice

by heather
Recently I got a recipe exchange chain email from a friend of mine. I passed it on to several people in my address book including an old nursing instructor. She's currently serving a mission so declined to participate, but did give me this recipe for Sweet Chilean Lime Beans and Rice. I tweaked it so it worked well in my crock pot and had a stronger lime flavor. My husband (one of my toughest and most important food critics) loved it. This with a side of fruit makes a complete meal, but it would Read more [...]

Food Storage Friday: Plum Sauce

by heather
Several weeks ago we found ourselves with a surplus of plums from our Bountiful Basket. I remember when I was growing up my mom and grandmothers canned plums and I thought that they were gross. But I decided that there had to be something delicious that I could do with these. The answer: Asian Plum Sauce.  Now this recipe itself calls for both fresh and food storage ingredients, but the real beauty of it is that once prepared it makes preparing quick and healthy meals  with food storage Read more [...]

Food Storage Friday: Stir-fried Green Beans with Rice

by heather
Sometime in the last month we got green beans in our Bountiful Basket. My husband has a tendency to turn his nose up at green beans and my kids won't try them either. One day I mentioned that we should eat them and my husband said "I can't imagine that there is anything you can do to green beans to make them delicious." I took this as a challenge. Heather has a tendency to be fairly irritated when someone tells her that she can't do something. When I was in college my department counselor laughed Read more [...]
