Coconut Orange Pancakes

by heather
By first appearances these pancakes look like any other pancake, but they are significantly more delicious than the average pancake. I experimented these up one morning and they have been a crowd favorite. And no I didn't forget the oil, you can substitute orange juice for oil in pancake recipes. You can serve these with pancake syrup, however Thing 1 prefers them with Nutella and banana slices. Food Storage Friday: Peach Pancakes

by heather
I found this recipe on Thug Kitchen. I love his recipes, his emphasis on healthy clean vegan eating and his stick-it-to-the-man attitude, however I will warn you that his language is somewhat offensive but I can't help but laugh at his posts. I made these pancakes for dinner this past Wednesday, and my entire family loved them. Hooray for breakfast for dinner! I was surprised that they didn't taste as peachy as I was expecting, but they were still delicious. Peach Pancakes Food Storage Ingredients: 2 Read more [...]

Food Storage Friday: Apple Buttermilk Muffins

by heather
I recently had an excess of milk that was about to expire and tried these muffins. My family loved them, particularly the littlest one. She ate four of them in the space of a few hours. Thing 2 complained about the nuts, so for the second batch I made half of them without. (And if you're thinking I used my oven in St George in July, you would be mistaken. That's crazy. I use my sun oven whenever possible.) I got this recipe from Food Storage for the Clueless (with my own minor adjustments included). Buttermilk Read more [...]

Food Storage Friday: Crepes with Nutella

by heather
When I was in high school and I wanted to persuade my brother to do anything, I would make promises of banana crepes. (e.g. If you help me clean the house I will make you banana crepes.) The crepes that I made back then were not as healthy as these ones are and they didn't use as much food storage, but I promise that this version is equally delicious. (I tried them three times in past week just to be sure.) The original version also included a cinnamon butter syrup with sauteed bananas that was tasty, Read more [...]

Food Storage Friday: Orange Blueberry Bread

by heather
I found this recipe on A Bountiful Kitchen when looking for a good blueberry muffin recipe. I tried a few and this was my favorite. It is a little time consuming to do on a regular basis, read: this recipe creates a whole lot of dirty dishes but they do make delicious muffins. Or bread. After the first time I just started pouring the batter into bread pans because it was easier and it worked. And of course I made several changes, like using more food storage ingredients, because that's how I roll. Read more [...]

A Few Tricks for Healthy & Delicious Waffles

by heather
We love waffles. It's one of the few things that everyone here eats and doesn't bother my breast-feeding infant with reflux, plus it's a quick, easy and low-cost meal. Here are a few tips that I have found to make them healthier and tastier.Add a heaping tablespoon of ground flax seed to the batter. It help you get your Omega-3's, some extra fiber and protein and you can't taste it. I also throw a tablespoon of wheat germ into the batter for extra Vitamin E and fiber and no one can taste that either.Substituting Read more [...]

Food Storage Friday: Cranberry Upside-Down Breakfast Cake

by heather
I found this recipe in the newspaper a couple weeks ago and made it for my family last weekend (adapted using food storage). It was delicious and helped me use some of the very large bag of cranberries that I have in my freezer. (That's three experimental recipes in a row and they were all winners! Score!) My family made thisĀ disappearĀ fast. We will definitely be making this again, but only for special occasions, because it is very sugary.
