This recipe is another delicious accident. Last weekend we went to a party for the 4th of July. Our good friend's partner was thoughtful enough to make bean burger patties for us. Recently in our Bountiful Basket we got kale. What does one do with this cabbage-like vegetable? If you can get a good deal on mangos, I recommend this salad. I found this recipe on Pinterest, and what do you know, it turned out pretty well. (The recipe is originally from Simply Love Food.) She said to stuff three to four peppers with the filling. I used 2 average peppers and one long red pepper. I still had enough filling leftover to fill at least four more peppers. I found this recipe on Skinny Bovine's Kitchen. She says this rice is drool-worthy. I have a hard time drooling over anything that isn't cheesecake, but it was definitely yummy. So last week, a few hours after delivering Miss Cindy Lou-Who, I got online to order a Bountiful Basket (which btw was an awesome basket). Whenever I have made chile verde sauce my family pretty much inhales it. Here's the secret to my awesome chile verde sauce: I throw in a bunch of stuff until it looks and tastes right and call it good. Mexican Party At My House

I just have to say that 'I Heart the Bountiful Baskets Mexican Pack'. Nothing inspires a fiesta like fresh Mexican food, even if it's just for me and the fam.
