Food Storage Friday: Black Bean Tacos

by heather
This recipe is another delicious accident. Last weekend we went to a party for the 4th of July. Our good friend's partner was thoughtful enough to make bean burger patties for us. They had a little bit of a taco flavor to them, so when I attempted to make patties and they fell apart I stirred them into crumbles, added some more spices and cooked them until they were crisp, and they make an AMAZING taco filling. Book Review: Isa Does It

by heather
This is currently my favorite cookbook. Isa Does It: Amazingly Easy, Wildly Delicious Vegan Recipes for Every Day of the Week makes vegan cooking a tangible reality, not something that only movie stars with personal chefs enjoy. She has many delicious recipes with, tips and tricks to make preparation easy, like how to shop, how to plan and the best way to chop tempeh. This book (and her previous two books) helped make me familiar with previously obscure ingredients such as nutritional yeast and Read more [...]

Food Storage Friday: Goddess Noodles

by heather
Once upon a time, back when I wasn't a full-time college student and took time to coupon, I got 20 boxes of spaghetti noodles for free. Recently, I have been trying to use up my pasta before we move and this recipe puts everyday spaghetti to shame. It's another winner from Isa Does It: Amazingly Easy, Wildly Delicious Vegan Recipes for Every Day of the Week, with a few minor changes. Goddess Noodles Food Storage Ingredients: 12 oz whole wheat spaghetti noodles 1/2 cup tahini 1/2 teaspoon salt 2 Read more [...]

Food Storage Friday: Buffalo Falafel

by heather
I found this recipe at Thug Kitchen. His language would be considered offensive by many, but if the f-word doesn't bother you, go read his commentary because it's funny. I loved this recipe so much that I made it 3 times in the past couple weeks. It is DELICIOUS! And spicy. My very carnivorous brother-in-law even thought it was delicious. I'm not a huge fan of falafel, I feel like generally it is too doughy and greasy, but I like this. I liked it even more when I decided to make the balls Read more [...]

Food Storage Friday: Lentil-A-Roni

by heather
I've had a request for more lentil recipes and this one is a winner. This recipe comes from Isa Does It: Amazingly Easy, Wildly Delicious Vegan Recipes for Every Day of the Week. (Which btw is I think my favorite cookbook ever.) This recipe is easy, but it is a little time consuming and requires you to plan ahead a few hours. The result is a cheap, delicious and satisfying meal approved by husbands and munchkins alike. Isa patterned it after a childhood favorite from a can, but I promise it is much Read more [...]

Food Storage Friday: Pesto Chickpea Sandwich

by heather
This is a healthier version of this recipe. I love it because it is delicious, it's full of veggies and beans and it can be assembled in less than ten minutes total. Yes! I have tested it at my house and unlike the other version it is a hit with big people and little people. If you are of the vegan persuasion, just make sure that you are using a vegan variety pesto and bread. If you're not picky, whatever. Pesto Chickpea Sandwiches Food Storage Ingredients: 1 (14.5 oz) can of chickpeas, drained Fresh Read more [...]

Food Storage Friday: Pesto Risotto with Balsamic- Braised Veggies

by heather
This week I thought I would try something new. Risotto, it sounds so fancy, and from what I hear it brings cheftestants on Food Network Show to tears. I'm not so confident in my skills that I would enter it into a contest, but it was delicious and I definitely would make it again. However, when I finished I realized I forgot the wine. Oops. I think my risotto turned out a little stiffer than it was supposed to, it's supposed to be creamy. This was just yummy pesto flavored rice, next time I must Read more [...]

Food Storage Friday: Pesto Gnocchi Soup

by heather
Last week when I started browsing through Isa Does It: Amazingly Easy, Wildly Delicious Vegan Recipes for Every Day of the Week, this was the recipe that I was most excited about trying. Thing 1 looked at the picture in the book and said "Mom, it looks like there are giant bugs in that soup. Gross" How is it that I have been her mother for this long and she has never tried gnocchi? Those are not bugs, those are the best kind of pasta you can get sans cheese! When I lived in Argentina, this pasta Read more [...]

Roasted Potato & Fennel Soup

by heather
The past two weeks, the bountiful basket has included fennel. Fennel is awesome. It has vitamin C, potassium, B vitamins, fiber, calcium and iron. A one cup serving contains 27 calories. Fennel reportedly has medicinal properties, improving digestive health and helping with menstrual cramps. It even makes multiple appearances in Greek mythology, and was used as an award for ancient marathon runners. How would that feel? 'You just ran 25 miles in sandals. You win a VEGETABLE!' I personally would have Read more [...]

Book Review: Vegan with a Vengeance

by heather
This book was recommended to me by a friend, Julie, who as an experiment spent some time as a vegetarian. She said it was the only cookbook that she has ever read while laying in bed. Vegan with a Vengeance : Over 150 Delicious, Cheap, Animal-Free Recipes That Rock is a great resource if you're a beginner to vegetarian recipes. Each recipe includes stories and preparation tips. Isa Chandra Moskowitz, host of the community access vegan cooking show The Post Punk Kitchen, tells interesting and amusing Read more [...]
