Food Storage Friday: Apple Cinnamon Wheat Berries

This breakfast seems perfect for a cold morning. I wish that I had found this recipe a few months ago.

Apple-Cinnamon Wheat Berries
Food Storage Ingredients:
1 & 1/2 cups dry wheat kernels (wheat berries)
3 & 1/2 cups vanilla almond milk
1/3 cup old-fashioned oats
1 cup apple juice or water
1 tsp ground cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup packed brown sugar
6 Tablespoons sweetened dried cranberries
1/4 cup sliced almonds or cashews (optional)

Fresh Ingredients:
1/2 cup orange juice
4 apples, peeled and chopped into 1″ pieces

1. Coat the inside of a 4 to 5 1/2 quart slow-cooker insert with nonstick cooking spray. Combine almond milk, wheat berries, juice, apples, oats, cinnamon, nutmeg and salt in slow cooker. 2. Cover and slow cook on low for 9-10 hours. Uncover and stir in brown sugar and cranberries. 3. Spoon into bowls and top with nuts.

My husband said this tastes really good, for something that is healthy. Thing 1 had already eaten breakfast by the time I had come home from running. Thing 2 insisted that it smelled like a Leapster. (Sometimes I feel like Thing 2’s opinion doesn’t count. I mean he doesn’t even like pizza.) Cindy Lou Who and I enjoyed it, so there you go.
