Food Storage Friday: Low-fat Oatmeal Scotchies

These cookies did not turn out to be everything I hoped they would be. They are pretty healthy and my husband likes them, so that counts for something right?   I was experimenting with white bean puree instead of butter, but I didn’t get the soft chewy texture I was hoping for. Still good, just not the magical cookie I was imagining. I suppose magical cookies generally aren’t healthy :(  I may be experimenting with this recipe again.

Low-fat Oatmeal Scotchies
Food Storage Ingredients:
1/2 cup white sugar
1/2 cup brown sugar
1/2 tsp vanilla
1 cup wheat flour
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cups oats
1/2 cup shredded coconut
1/2 tsp cinnamon
1/2 cup purreed white beans
1/2 cup butterscotch chips

Fresh Ingredients:
1 egg

1. Cream beans and sugars, beat in egg and vanilla. 2. Combine flour, cinnamon, baking soda, and salt. Beat into sugar mixture. 3. Stir in oats and coconut. 4. Drop by rounded tablespoonfuls onto a greased baking sheet. Bake for 9-10 minutes.
