Food Storage Friday: My Best Wheat Pancakes

I’ve made many a batch of pancakes from scratch, and after much trial and error, I think I got it right. They’re easy, they use food storage and my family devours them. The fact that all of my kids were excited to eat them is a pretty big deal at my house.

Buttermilk Wheat Pancakes

Food Storage Ingredients:
3/4 cup whole wheat flour
1/2 cup all purpose white flour
1/4 cup sugar
1 tsp baking soda
1 heaping tsp baking powder
1/4 tsp salt
1 tsp vanilla
1/4 cup applesauce

Fresh Ingredients:
1 egg
1 1/4 cup buttermilk

1. Heat griddle/skillet. 2. Mix together first 6 ingredients. 3. Whisk in wet ingredients. 4. Pour batter onto hot griddle and flip when several bubbles have formed. Makes 12 pancakes

Optional: Add a few blueberries to each pancake after pouring onto griddle.
