Food Storage Friday: Apple Buttermilk Muffins

I recently had an excess of milk that was about to expire and tried these muffins. My family loved them, particularly the littlest one. She ate four of them in the space of a few hours. Thing 2 complained about the nuts, so for the second batch I made half of them without. (And if you’re thinking I used my oven in St George in July, you would be mistaken. That’s crazy. I use my sun oven whenever possible.) I got this recipe from Food Storage for the Clueless (with my own minor adjustments included).

Buttermilk Apple Muffins
Food Storage Ingredients:
3/4 cup brown sugar + 1/8 cup brown sugar
1 cup wheat flour
1/2 cup white flour
1/2 cup oil
1/2 teaspoon  baking soda
1/4 teaspoon salt
1 teaspoon vanilla
1/4 cup nuts
1/2 teaspoon cinnamon

Fresh Ingredients:
1 apple, peeled and cored
1 egg, beaten
1/2 cup buttermilk

1. Preheat oven to 325. Combine nuts, cinnamon and 1/8 cup brown sugar. Set aside. 2. Beat together sugar, vanilla, oil and egg. 3. Mix together dry ingredients and gradually add to wet mixture, alternating with apple chunks and buttermilk. 4. Spoon into paper-lined muffin tin. Sprinkle with nut mixture. 5. Bake for 30-35 minutes. Makes 12 muffins.
