Food Storage Friday: Peach Pancakes

I found this recipe on Thug Kitchen. I love his recipes, his emphasis on healthy clean vegan eating and his stick-it-to-the-man attitude, however I will warn you that his language is somewhat offensive but I can’t help but laugh at his posts. I made these pancakes for dinner this past Wednesday, and my entire family loved them. Hooray for breakfast for dinner! I was surprised that they didn’t taste as peachy as I was expecting, but they were still delicious.

Peach Pancakes
Food Storage Ingredients:
2 1/2 cups of whole wheat flour
1 1/2 Tablespoons brown sugar
1 Tablespoon baking powder
1/2 tsp salt
1/2 tsp ground ginger
1/2 tsp cinnamon
1 tsp vanilla extract
dash cloves
dash nutmeg

Fresh Ingredients:*
1 cup mashed/pureed peaches (1-2 fresh peaches)
2 cups almond milk

1. Mix dry ingredients. 2. Add in wet ingredients. Mix thoroughly, but don’t overmix. It is ok to have a few lumps. 3. Cook in a lightly greased pan over medium heat. Serve with maple syrup. Makes approximately 15 pancakes.

*If you use canned peaches and shelf stable almond milk, honestly everything here could come from your food storage.
