Food Storage Friday: Grad School Goodwich

Awhile ago, my friend Lisa at Idareyoutoeatit.com, posted a recipe for a New York Goodwich wrap. It looks fantastic, but every time I look at it, I think ‘But there are so many ingredients, and so much preparation.’ I’m a working mom in grad school. These days if a recipe isn’t done in the crock pot or in less than 30 minutes, I don’t have time for it. I’m sure that my readers can relate. Now I’m certain Lisa’s version is delicious, but mine is faster and also delicious. Kudos to her for thinking of putting wheatberries in a wrap. Awesome idea!

Grad School Goodwich
Food Storage Ingredients:
1/2 cup BBQ sauce
1 cup cooked wheatberries
2 1/2 Tablespoons mayo
2 teaspoons Dijon mustard
1 Tablespoon olive oil
pickles

Fresh Ingredients:
1 (12oz) bag grated broccoli slaw mix (roughly 4 cups)
1 large onion, chopped
16″ wraps (Lisa used whole wheat, I used some from a spicy variety pack)
lettuce

1. Saute onion in olive oil in a skillet until golden. 2. Mix broccoli slaw with mayo and mustard. 3. Add BBQ sauce and wheatberries to onions, cook until heated through. 4. Assemble wraps with broccoli slaw, wheat mixture, pickles and lettuce. Makes 4 wraps
