Loaded Baked Potato Soup

This weekend we had a potluck and after going out of town I had a lot of milk that was close to expiration, plus a lot of potatoes, so I made this soup to share. I adapted it from several that I found online and it turned out pretty good. I’m not going to pretend that this soup is good for you, but it is delicious. Makes 8-10 servings

Loaded Baked Potato Soup
2/3 cup butter
2/3 cup flour
7 cups milk
5 large potatoes, baked and cut into quarters
1 cup sour cream
2 cups shredded cheddar cheese
2 cups vegetable broth
1 tablespoon salt
1 tablespoon dill weed
5 green onions, chopped
1 tablespoon green Tabasco sauce
1 tablespoon Cholula hot sauce
1 teaspoon red pepper flakes
bacon bits to garnish

1. Melt butter in a pot, gradually stir in flour. Then gradually whisk in the milk and vegetable broth. 2. In a blender mix a few cups of the soup base with half the potato chunks. Return to the pot and repeat with remaining potatoes. (At this point I put it in my crock pot because it is easier to keep warm that way.) 3. Add remaining ingredients and stir until heated through.
