This is a healthier version of this recipe. I love it because it is delicious, it’s full of veggies and beans and it can be assembled in less than ten minutes total. Yes! I have tested it at my house and unlike the other version it is a hit with big people and little people. If you are of the vegan persuasion, just make sure that you are using a vegan variety pesto and bread. If you’re not picky, whatever.
Pesto Chickpea Sandwiches
Food Storage Ingredients:
1 (14.5 oz) can of chickpeas, drained
1/2 one large carrot, chopped
1 celery stalk, chopped
1/2 cup pesto*
1. Mash chickpeas in a bowl with a potato masher. 2. Mix with celery, carrots and pesto. 3. Serve on bread with lettuce. BAM Makes 6-8 sandwiches
If you keep pesto in your food storage, even better.
